Easy Green Lunch.
This took 10 minutes to make before i left for work. Easy and delicious. Cous cous and wilted kale in a savoury sauce with freshly diced tomatoes.
Warm Kale Salad
Cook half a cup of cous cous according to the instructions
5 leaves of Kale (any leafy green), roughly chopped
1 tbs olive oil
2 tbs nutritional yeast
1/2 cup or 1 cup of boiled water (depends on how much saucy you want it to be).
Place cous cous in a bowl.In a little bowl, add the nutritional yeast, olive oil, salt and water and mix around.
Use the same pan to lightly steam the kale. Using a medium to high heat, add a dash of olive oil and the kale. stir around and coat in the olive oil, pour over the sauce in the little bowl and stir it all around. Top a lid on and leave for about 4 – 5 minutes until it’s wilted. Remove from heat and add on top of the cous cous. I took the tomato to work and diced it up just before serving. This is enough to serve one hungry person or between two polite eaters.
