I adore scrambled tofu. I used to dislike tofu. I didn’t realise all of the things i was doing wrong…like not squeezing it out, not letting it marinate and not using lots of spices, condiments such as soy sauce, tamari or sriracha….plus a little bit of salt really brings it to life. This time i added some fried up mushrooms and boy, this was yummy. I only wished that i could have been bothered to cook up some fresh steamed rice to go along with this dish.
I used my recipe but was a bit more heavy handed with the spices and condiments, and added a bit more tumeric just for good colour.
