Baja Style Tacos.

This dinner was one of my faves. Beer marinated tempeh and a fizzy coleslaw made using apple cider vinegar with a lime mayo. I used a recipe from my Veganomicon recipe book. If you don’t have this recipe book, and you are wanting to cook more vegan meals, i highly recommend purchasing this book!!! It’s amazingly clever and full of information regarding vegan cooking and it’s recipes are very diverse.
This recipe did take a bit of  forward preparation to get it ready, with the marinating and making the mayo, but after that part you’re on easy street and it was worth it. This recipe would be ideal for a lazy afternoon gathering watching the footy.
