Caramel Popcorn.
Today we made popcorn, caramel popcorn. Sweet, salty, crunchy and chewy.
Caramel Popcorn.
1/2 cup corn kernels
2 tbs of vegetable oil
1/4 cup of brown sugar, firmly packed into the measuring cup
2 tbs of coconut oil
Himalayan salt to your taste.
I just cooked the popcorn as per the instructions on the packet and removed the popcorn from the heat, but kept it in the big pot with the lid off. Next, using a small saucepan i melted the sugar and coconut oil until it was a liquid, be quick to take it off once it has liquified as it can get burnt and it won’t make your popcorn taste nice. Pour the liquid goop over your popcorn and mix it really well into your popcorn and add your salt, we used about half a tablespoon of salt. This was super easy to make and it was very addictive, i have never enjoyed fresh caramel popcorn before and it was a real treat for me! Next time i will try using a dusting of icing sugar and salt to get sweet and salty popcorn.
I love ‘proper’ popcorn, especially when you make it in a saucepan with a glass lid so that you can see the explosions! This looks like a great recipe to try.
It is so easy to make pop corn the ‘proper’ way, it’s so much more creative and tastier than the packet stuff. I find it amazing how much convenience and packaged foods have changed our way of cooking and eating, as much as people may be able to suggest the positives of packaged foods, it has defintely disabled our beliefs and understanding in our ability to cook real food just as quickly and conveniently!
Let me know how you go trying the recipe, there are loads more popcorn recipes out there in ‘google world’ to inspire your creative side :-)))
